ESB’s (Extra Special Bitters) are English Style Pale Ales, traditionally with the highest gravity of a brewery’s offerings, with “Ordinary Bitter” being the lowest gravity and “Special or Best Bitter” as the mid-range gravity offering. These beers were collectively called “Bitters” by English pub drinkers, and eventually the term “Bitters” became synonymous with “Pale Ale.” Despite the name, “Bitters” are not really bitter beers. Their hallmark characteristic is a balance between malt and hops.
